My car’s gone to hell, as I knew it eventually would. My only regret right now is for the one person whom I’ve run around on bullshit illegal errands to never be treated kindly, taken care of, respected or even wished a happy birthday. So no doubt, of course, she’d be too busy with her face in a bag of her own work to give me enough gas money, let alone help throw in for oil, since my car leaks it, help with maintenance. No, let’s just put a couple hundred miles on it at my beck and call and say FUCK HEATHER. Fuckin junkies, maaaaaaaan.

On the other hand, Nate has been bending over backwards and sacrificing everything he can to help me, which I really do appreciate because I’d only be further in being bass-akward as far as what to do in the first place. I’m glad he loves me.

I’m praying to whatever gods there may be that I can convince my grandpa into selling off this car or junking it and even getting me a $1500 one until I can start working and pay him back. I had an appointment for a tour through Xenon today. I’ve been waiting to be able to do that for five years. And now, this is what’s stopping me, of course.

I just need $5 donations, really badly right now.

I just replaced a headlight, tire valve caps and two tires on my car, all while I’m not working and now I need another tire, a headlight relay, a new battery and whatever else will pop up between now and then. I just need help.

Mason Jar Salads

1. Dressing on the bottom, lettuce on the top. If the two are touching the lettuce will turn to slime.

2. So, dressing goes in first. On top of your dressing, use a rather “hearty” vegetable, such as shredded cabbage, pea pods, or julienne carrot matchsticks. They can withstand the acidity of the dressing, and actually get better!

3. Pack it in. Use a nice variety of colorful vegetables! Make it fun and involve the kids.

Here are some of our recipes:

Poppyseed: Layer, in this order:

-poppyseed dressing

-carrot shreds

-green peas

-pineapple

-blueberries

-raspberries

-lettuce

Asian:

-light asian ginger dressing

-peapods

-carrot shreds

-cabbage shreds

-water chestnuts

-green peas

-bean sprouts

-quinoa

-toasted sesame seeds

-lettuce

Seafood

(I make a light dressing with light mayo, skim milk, s and p, and parmesan

-dressing

-cabbage shreds

-cherry tomatoes (halved)

-black olives

-celery

-drained canned crab / drained canned salad shrimp

-lettuce

Caesar:

-light Caesar dressing

-carrot shreds

-diced grilled chicken

-celery

-cukes

-lettuce

-parmesan

(add croutons later) …they get mooshy in the jar.

Breakfast Omelet Muffins

Breakfast Omelet Muffins!

Ingredients

1 pound Italian Sausage (sweet, mild, hot variety depending on your preference)

1 cup broccoli florets (or other veggie)

8 large eggs

1/4 cup milk (or half and half depending on how you’re feeling that day)

1/2 tbsp vegetable oil

1/2 tsp baking powder

salt & pepper to taste

Freshly grated Parmesan Cheese as needed

Directions

1. Preheat oven to 375 F.

2. In a large saute pan, over medium high heat, brown Italian Sausage for about 5 minutes, or until the sausage is no longer pink. Remove from heat and stir in broccoli.

3. Whisk together eggs, milk, oil and baking powder. Season with salt and pepper.

4. Lightly spray a 12-cupcake pan with oil.Spoon out the sausage and broccoli mixture evenly into each cupcake.

5. Ladle the egg mixture over sausage and broccoli.

6. Sprinkle with Parmesan cheese.

7. Bake for 15-20 minutes.

Disneyland Loaded Baked Potato Soup

Disneyland Loaded Baked Potato Soup

1 pound bacon, roughly chopped

1 medium yellow onion, diced

1 large carrot, peeled and diced

3/4 cup diced celery

4 large russet potatoes, peeled and diced

4 medium red potatoes, diced

1/4 cup flour

2 cups chicken or vegetable stock

Coarse salt and freshly ground pepper, to taste

4 cups heavy cream

Optional Garnishes: chopped chives, bacon bits, sour cream, shredded cheddar and Monterey Jack cheeses

Method:

In a 6 – 8 quart stockpot over medium heat, fry bacon until crisp.

Remove bacon and drain on paper towels (reserve half for garnish). In the bacon fat, cook onions, carrots, and celery until the onions are translucent. Add potatoes and cook for 4 minutes, stirring occasionally.

Sprinkle in flour and stir constantly over low heat about 5 to 7 minutes until the mixture thickens slightly. Add stock and half of the bacon. Season with salt and pepper.

Over medium-high heat, bring the soup to a simmer and cook for 25 minutes, or until the potatoes are soft. Mash some of the potatoes for thicker, creamier texture. Add cream and simmer for 5 minutes. Adjust thickness by adding water or stock. The soup should have a creamy consistency. Season to taste, and garnish with toppings, if desired.

*Chef’s Note: Soak diced potatoes in cold water until ready to use to keep them from turning brown. To make bacon easier to chop, lightly freeze.
